This avocado egg salad on toast recipe is sort of a homage to my toast queen food blogger – eatwitheva. I used to not be a fan of bread or toast in general, but upon understanding her love of bread and reading up on her various toast recipes, I really grew to love them – and yes Eva, I’m waiting for you to make me those toasts (lol).
While an avocado egg salad might sounds really simple, I can assure you it does pack tons of nutrition and healthy fat to fuel your mornings. If you want to cut down the calories, feel free to use only egg white and reuse the yolks for another recipe. Avocado is a healthy fat that helps lower “bad” cholesterol and also boosts your metabolism. Nothing like a little quality fat to help you burn fat.
It’s mind blow, I know.
I’m also aware that my avocado and egg pieces are much more “chunkier” and not as silky smooth as other recipes. That’s just how I like my sandwich/toast as I prefer them to have a bite to it, so feel free to mash the avocado & egg into your likings!
To amp up the flavors in the salad, feel free to add your choice of TABASCO® sauce. In this recipe I used the Habaneros flavor for that distinct fruity and sweet taste, and a good kick of heat from the habaneros.
